South African Boerewors Spice Pack

Product Description

Boerewors is a type of sausage, popular in South African cuisine. The name comes from the Afrikaans words boer ("farmer") and wors ("sausage"). Boerewors is made from coarsely minced beef (sometimes combined with minced pork, lamb, or both) and various spices. 

The Boerewors Spice Mix is a pungent and flavoursome blend of spices including roasted coriander, cloves, pepper and pimento

Traditionally each boerewors is usually made approximately 1 metre long and formed into a continuous spiral. They are typically cooked outdoors on a braaie or BBQ but can also be fried or baked in an oven.

To make 5kgs of Boerewors, you will need:

  • 1 Pack of  Boerewors Spice Mix
  • 3.55kg Lean Beef
  • 0.85kg Pork Fat
  • 330ml Chilled Water
  • 1 pkt Hog Casings

Method

  1. Mince meats through a coarse 8mm plate (If not already minced).
  2. Blend the meat, half the water, the spice pack, and then the remaining water until the water is taken up and the mixture becomes tacky.
  3. Pass the mixture through a 5mm mincing plate. (If you do not have a mincer, you can skip this step)
  4. Fill the sausage casings making 1 metre lengths, coiled to the size of a dinner plate. (The Gonzo MkII Sausage Stuffer is handy here)
  5. Store the sausages in the fridge overnight to stabilise and to allow the flavour to develop.

    I like the sausage roasted in the oven and served with mashed potato, gravy and greens. This was the first time I had made a sausage and it is a lot easier than I thought it would be to make using the pig casings. I actually made up the fat content using the fat of bacon rashes. It tasted okay(;

    This kit makes a distinctively spiced Boerwors topped with bold notes of clove. So much better than the store bought snag. Do yourself a favour; get this kit, save a buck, and enjoy the best Boerwors you've tasted.

    Made this in a kilo batch to spec. Bought the IGA store product the day before and judged this up against that. This is the best I have had. Loved it Will be happy to make it in the future.
