Nigari powder is used to produce Japanese-style tofu. Nigari powder is actually Magnesium Chloride, a Magnesium salt that is highly soluble in water and has no perceptable flavour.

Using Nigari powder as a coagulant produces a tofu with a smooth and tender texture.
