Product Description

Brevibacterium linens is one of the most important surface bacteria in the cheese making process due to its role in the colouring of the surface and its typical flavouring activity (demethiolase activity).

Brevibacterium Linens is used for any cheese with a smear rind, in particular washed rind and uncooked, pressed cheeses. It imparts a distinctive flavour as well as providing an aromatic orange rind.

Some of the cheeses that require the addition of Brevibacterium Linens are; Munster, Limburger, Port-du-Salut, Raclette and Năsal.

Brevibacterium Linens

Dosage: 1/4 teaspoon per 10 litres of milk (Each sachet Will dose up to 50 litres of milk).

Storage: Will remain viable for 12 months or more if stored in the freezer.
